Recipe Spotlight: Authentic Corn Tortillas with Veggie Salsa

Now that you’ve learned more about these two fabulous products, it’s time to put them to the test! Prepare this mouthwatering tortilla and salsa recipe for lunch and you’ll quickly add it to your list of fast, tasty go-to dishes.
Ingredients
- 2 cups masa “corn flour”
- 1 ¼ cups warm water
- ½ tsp salt
- 1 medium zucchini, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 2 tbsp. olive oil
- Salt and pepper, to taste
- Fresh cilantro, chopped (for garnish)
- Lime wedges, for serving
Instructions
- In a mixing bowl, combine masa, warm water, and salt. Mix until a smooth dough forms.
- Divide the dough into golf ball-sized portions and roll into balls.
- Preheat your comal over medium-high heat.
- Place a ball of dough between two sheets of parchment paper inside tortilla press. Press down firmly to flatten into a thin tortilla.
- Carefully transfer tortilla onto hot comal. Cook for about 1-2 minutes per side, or until lightly golden and cooked through. Repeat with remaining dough.
- While tortillas are cooking, toss zucchini, peppers, and onion with olive oil, salt, and pepper.
- Add veggies to comal and grill until tender and slightly charred, about 5-7 minutes.
- Spoon veggie mixture onto warm tortillas, garnish with cilantro, and serve with lime wedges.
