Smart Design, Efficient Outdoor Cooking

Our disc, constructed of high-quality, corrosion-resistant 18/10 stainless steel, provides fast, efficient heat distribution. Featuring a concave shape, it concentrates the most heat at its middle for cooking while the outer rim keeps cooked ingredients warm, creating a large-scale, dual-temperature cooking surface. This dynamic design allows grill masters to serve more guests in less time. Cooks can simultaneously sear meats and sauté vegetables while also warming tortillas along the disc’s rim. Large, riveted handles also give oven mitt-equipped hands a sturdy, safe grip when transporting your disc. Taco ‘Bout a Tasty Recipe: Mexican Discada

Now that you’ve learned more about our new Princess House® Barbecue Disc, you’ve just got to try Mexican discada! Gather the whole family and flex your backyard barbecue skills with this tasty take on discada tacos. Showcase your new disc, traditional Mexican flavors, and show-stopping family-style preparation with this simple recipe.
Ingredients
- 8 oz. smoked bacon, diced
- 14 oz. pork loin (skin removed), cubed
- 2.5 lbs. boneless chuck, cubed
- 8 oz. ham, diced
- 1 lb. pork chorizo, casing removed and crumbled
- 1 medium onion, diced
- 2 bell peppers (1 red, 1 green), diced
- 4 garlic cloves, minced
- 3 jalapeńo peppers
- 4 scallions
- 1 cup beef broth or beer
- ½ bunch cilantro, chopped and divided
- Salt and pepper, to taste
- Tortillas
Toppings and Sides
- Lime wedges
- Pico de gallo
- Shredded cheese
- Sliced avocado
- Mexican rice
- Garden salad
- Pinto beans or refried beans
Instructions
- Preheat disc on disc stand over burner. Add bacon and cook, stirring as needed, until cooked and crispy, then move to edge of pan. Add pork loin and cook, stirring periodically, until fully cooked, then move to edge of pan.
- Continue by adding the chuck. It will release juices but allow them to evaporate and the meat to brown. Move to edge of pan.
- Next, add ham and stir until browned. Move to edge of pan.
- Lastly, add chorizo and stir until completely cooked. Move to edge of pan.
- Add onions and sauté until slightly softened. Add bell peppers and garlic and sauté 1 minute more before stirring in whole jalapeño peppers and scallions.
- Move all meat back into center of disc with vegetables, add beef broth or beer and half of cilantro, and mix to combine. Let cook until broth evaporates and all ingredients are coated.
- Add salt and pepper to taste, remaining cilantro, and mix to combine. Heat tortillas on disc edge, spoon discada into tortillas, and serve with desired toppings and side dishes.
